Coconut Mint Chip Smoothie
I’m not usually a mint chip kinda gal, but I had some fresh mint on hand, so I did the damn thang. It totally changed my mind re: mint. You need this in your life!
P.S. I threw in some pine pollen for a boost of hormonal support.
Serves 1
½ cup homemade coconut milk
¼ cup coconut yogurt (I like Coconut Cult Coconut Cream Probiotic Yogurt)
1 frozen banana
1 frozen zucchini
½ cup frozen cauliflower
a spring of fresh mint
1 scoop Vital Proteins Vanilla Collagen or protein of choice
2 tbs cacao nibs
1 tbs chia seeds
½ tsp Sun Potion pine pollen
granola of choice
in a blender, combine the coconut milk and yogurt, banana, zucchini, cauliflower, mint, whey, cacao nibs, chia seeds, and pine pollen. Blend on high until smooth and thick. to serve, top with granola.
