Meal for One

This is my favorite recipe I’ve made since the bub was born. This one’s loaded with the works—beans, lettuce, eggs, avo, and hot sauce. Literal flames!

Serves 1

1 medium Japanese sweet potatoes, sliced into 1/8-inch-thick rounds

2tbs avocado oil

curry powder

a few shakes of nutritional yeast

dried oregano

paprika

Himalayan pink sea salt

freshly ground black pepper

1tbs unsalted ghee

1 large egg

romaine lettuce

½ avocado

a spoonful of Better Bean Co Tuscan white bean dip

Hot sauce, to taste

Preheat the oven to 375ºF. Line a small baking sheet with parchment paper.

In a medium bowl, toss the sweet potato rounds with the avocado oil, curry powder, nutritional yeast, oregano, paprika, pink sea salt, and black pepper. Spread the rounds over the baking sheet in a single even layer. Roast for 45 minutes, flipping hallway through. Remove from the heat and let cool slightly.

Add the ghee to a small skillet over medium heat and fry the egg sunny-side-up.

Add the romaine lettuce to a serving bowl and load with the sweet potatoes, egg, avocado, and white beans. Drizzle with hot sauce to taste.
