Arroz Con Pollo

a staple in our home growing up. my mom said it was the easiest one pan meal we all loved and here i am, saying the same thing. both boys love rice + chicken so i’m whippin it up.

you’ll need:

3-4 chicken thighs, 3tbs evoo, 1 large diced carrot, 1/2 onion, lots of minced garlic, 1C rice, 2C bone broth, 1C can of diced tomatoes, dash of salt and cumin.

how to: on medium heat, drizzle evoo on the pan. add the onion, garlic and carrot. sauté for about 15 min. move veggies to the side and add the chicken. cook until chicken is browned and add the diced tomatoes. cook for a few minutes and add the rice. make sure rice is fully coated, add the broth and spices. cook uncovered for about 25 min on low. turn off the stove and cover the pan, let it sit for about 10min. serve with tortillas, chips and i added micro greens for extra nutrients. it’s SO dang GOOD!
