Plantain Crusted Chicken Tenders

is what’s on the menu.. don’t forget the fries + honey mustard dip 🔥
this is the type of stuff that gets me excited as an adult - kid friendly, delicious meals that take you back to your childhood. you need to try these!
you’ll need: a plate for 2 chicken breasts cut into strips, a bowl for 2 eggs whisked with garlic powder and salt. a bag of plantain chips blended with 2tbs paleo baking flour (or any flour that you have on hand) also a separate bowl for this. do it: line your baking sheet with avo oil and turn the oven on at 430. slice your sweet potatoes into fries, dip the chicken strips in the egg wash and into the plantain mix. once coated, place them on your baking sheet. repeat until all of your chicken is coated. in a separate baking sheet, place your sweet potatoes one by one. spray them with avo oil, shake that salt shaker and add a little garlic powder. bake until chicken is at 170 degrees (i used a thermometer, it’s seriously a game changer when cooking meat) and for the fries, til they’re crispyyy - 40 minutes tops. i flip them often since i don’t leave the kitchen while i’m cooking. for the honey mustard dip i used 2tsp of hot sauce, 3tbs stone ground mustard, 1tbs vegan mustard and 1tbs of manuka honey. it was the perfect texture and so gooood.
this is an old recipe that i wanted to recreate, sounded so good and i’m glad i did it!
